Ingredients
BBQ Sauce
200g diced tomatoes
226g honey
170 tomato paste
100g Worcester sauce
30g liquid smoke
10g smoked paprika
10g garlic powder
5g onion powder
Jackfruit
200g Tinned jackfruit
60g BBQ Sauce
Guacamole
2 ripe avocados
1 chilli pepper, diced
1/2 red onion
Coriander
50g EVOO
2 limes
Tabasco
To serve
4 small Blue tortillas, (we get ours from CoolChile Co)
100g Pineapple, chopped into 1cm cubes
Vegan Sour Cream (optional)
Baby gem lettuce
Introduction
At Farm Girl all of our dishes are vegan. This dish is a healthy, tasty alternative to traditional tacos, with jackfruit providing a great twist, and working as a substitute for meat.
Method
Mix all sauce ingredients in a pot and bring to a boil. Cook for 45 minutes. Blend until the texture is smooth. Set aside.
Rinse the jackfruit 3 times and shred the fleshy pieces. Lay them down on a tray lined with parchment paper. Add BBQ sauce and roast for about an hour.
Cut avocados in cubes and season with lime juice and salt/pepper. Add the chilli and the red onion chopped finely. Add EVOO and a hint of tabasco.
To Serve:
Toast tortillas lightly and top with guacamole and jackfruit. Add a tablespoon of chopped pineapple, chopped pineapple and vegan sour cream. Drizzle with BBQ sauce.
Serve warm.
