This is my One Planet Plate because of the great sustainable fish we use in that dish. Open Blue Cobia is one of those fantastic fishes available here in London that chefs and diners need to know more about. It has a very clean flavour, an unbelievable texture, the colour is even almost transparent. Here at Lima London, we simply prepare it in the tiradito style. It’s very simple. The fish is sliced very finely, dressed with a selection of tigers milk and chia seeds.
