Ingredients
1 Lime zest
1 Lemon zest
5 grams Lemon juice
Brandade made with 200grams of cod trimmings, garlic, rosemary, bay leaf
1 Orange zest
50grams Philadelphia
Salt
3grams Espelette pepper
5grams Chive
300grams Mash potatoes
Then breaded:
20grams Flour
2 Egg yolk
30grams Panko
Introduction
This is a zero-waste dish that we serve on our evening tapas menu in our bars.
Method
Step 1
Brandade:
Poach the cod in an infusion of milk ,garlic, rosemary, bay leaf and salt.
Once the fish is cook drain it
Step 2
In a kitchen aid with the paddle add the mash potato , the fish and the zest of orange, lime, lemon and the Philadelphia.
At the end add the espelette pepper , the lemon juice and the chives.
Step 3
Make a ball with the mix
Step 4
Bread the ball
-flour
-mix of egg yolk and salt
-panko breadcrumb
Realise this operation twice
