10 pineapple core batons (slices from the inside of a fresh pineapple)
2 tbsp beetroot juice (drained from vacuum packets of cooked beetroot) 2-3 tbsp coconut yoghurt
1⁄2 cup of diced mango
1 tbsp freshly diced ginger
1⁄2 cup apple juice
Whilst we do our best to minimise waste, we prepare the majority of our food in our own kitchen using raw ingredients and there are inevitably some bits we can’t use. But our incredible chef, Zak, wasn’t having it. He started making fresh smoothies for our team using the bits of fruit and veg which were destined for the bin.
Zak’s zingy pineapple, beetroot and ginger smoothie, made from the cores of our super sweet pineapples and juice from the beetroot that goes into our vegetarian poké.
Add all the ingredients to a blender and pulse until really smooth. Add more apple juice, beetroot juice or coconut yoghurt to reach the desired consistency and to taste.
