A 200lbs whole pork from brazilian autochthonous breeds such as Sorocaba, Piau, and Canastra roasted on charcoal

Method

The whole animal is roasted on charcoal on a especially made grill for 6 to 8 hours depending on the animal´s size.

The meat becomes soft and juicy while the skin gets crispy and crackling.
It is served with two options.

Option 1) bean with manioc flour, banana tartar, onion farofa, and collard greens.
Option 2) mashed pumpkins, egg farofa, and endive salad.
