Stir Fry 1 head of broccoli 500g vermicelli noodles 2 red peppers 2 yellow peppers 2 courgettes 2 heads of bok choy 1 large carrot 1 bunch spring onion 600g jackfruit
Dressing 3 limes 2 cloves garlic 2tbs minced ginger 1 red chilli 50g honey 100ml soy sauce 10ml sesame oil
Garnish 120g toasted peanuts 1 bunch coriander 1/2 bunch basil 10 lime wedges
A vegetarian stir fry, jack fruit is a great option as a meat alternative.
For the dressing Mince the garlic and ginger together with finely diced chilli Whisk together the honey with the lime juice, soy sauce and sesame oil and combine with the chilli, garlic and ginger
For the stir fry Run the vermicelli noodles under running hot water until soft and set aside Cut the broccoli into large florets then slice. Heat a pan with a touch of olive oil and saute the broccoli and jackfruit until nicely coloured and slightly tender Julienne the carrots, courgettes, peppers and spring onion and add to the pan Remove the base of the bok choy to separate the leaves and add to the pan Saute the mixture until tender then add the noodles and dressing. Garnish each portion with a lime wedge and some chopped toasted peanuts, basil and coriander
