English Mustard and Worcester

Panko pan then fry to medium rare

Introduction

Our Wagyu Katsu Sando is one of the most indulgent dishes on our menu yet still remains within the sustainable, planet friendly values that are important to us.

A classic Japanese inspired Sando with great quality and ethically sourced ingredients.

Wagyu is from the Warrendale Wagyu farm – we have spent time ourselves on this farm and see how well the animals are treated and cared for.

Our Milk loaf (Japanese Brioche) comes from Flour, Water & Salt in locally sourced in Macclesfield.

The same goes with the cheese and vegetables used in this dish.

Method

Season 4oz Wagyu fillet with Salt & Pepper.
Dip in Panko breadcrumb then fry to medium rare.

Make sauce by mixing equal parts Kewpie Mayo, tonkatsu, English Mustard and Worcester

Spread on Milk loaf then add Kimchi, onion and sliced cheddar.
Sandwich around the Katsu and fry in butter until golden.
Cut of crusts, quarter, Skewer then serve.
