The crab from this dish is sustainably sourced from a supplier in Dover and the dish produces zero waste. All of the crab is used in this dish and across other dishes on the menu, specifically, the shell are used to also make the crab bisque on the plate. Finally, the dish also incorporates sustainable avruga caviar which has received the Marine Stewardship Council certification, meaning the ingredient comes from a certified sustainable fishery and is applicable to the full supply chain.
